It never fails to amaze me how a minor mistake always seems to slip through when I finish a sermon. Thankfully, I review mine often, as I did for tomorrow’s sermon this morning. I found two minor mistakes, one of which would have been caught by the audience. There was also a major mistake in my slideshow that would have confused them. I’ll do a last review tomorrow morning.
The young gentleman who runs the livestream agreed to change the slides for me, so at least I don’t have to worry about that anymore. I just have to set my mind tomorrow not to look at the projector screen to double check. That’ll just make me nervous and distract me.
As much as I loved preparing this sermon, I’m glad to finally put it behind me. The two sermons this month really delayed my plans for writing my book. Today I finally sat down to write some more. It feels like ages ago (well, exactly one month). I don’t have any sermons planned for the rest of August, so I’m crossing my fingers that I’ll be able to deliver two chapters, and recoup that lost time.
One good thing that comes out of being unemployed and therefore not stressed out anymore, is that I feel like experimenting in the kitchen again. It’s actually an accurate measurement of my mental state. I love doing it, but it requires a lot of energy from me, because the first few times I try a new recipe, it fails, and that somehow always crushes me. If I’m not stressed out though, that’s OK. I just take some time to recover and go back to it later.
Today was such a day.
I had been toying with an idea for a recipe that my wife and I “invented” maybe all the way back in 2018 or 2019, but never tried out again. We basically just mix almond flour, honey, and coconut oil, then shape the mass into small pieces and bake them in the oven. I love the flavor of all the ingredients, and they taste great when combined.
The measurements I used today didn’t work out though. It turned really soggy and the cookies basically melted flat in the oven. I used 150 g of almond flour for 75 g of honey and 75 g of coconut oil. Yes. That’s a lot of oil. I only felt it when I had finished mixing the dough though. For the next batch I’ll try 15 g, test the consistency, and then add another 15 g if necessary. Maybe I’ll also do 90 g of honey. We’ll see.
